Who you calling a Ful!?
I have probably seen 100 + recipients for Ful Medames. One of those dishes that changes depending on where you come from and how your family have made it. I like the way food kind of evolves naturally.
What is Ful is likely the first question you have. A very commonly eaten dish In the Middle East. Main ingredient is the fava bean, packed full of serious goodies. You can get at your local international market, online and I have also seen them pop up in mainstream supermarkets. The rest is veg and some cumin!
I can eat this hot, cold and at any time of the day be it breakfast, lunch and dinner. That should clear up what occiaision to eat it (ANY!).
If you need a quick meal, running on a tighter budget this month or just want to feed the family a wholesome meal this is your solution.
Ingredients - Feeds Two People
1 can of 100g fava beans
1 clove of garlic
1 tea spoon of cumin
300ml of extra virgin olive oil (have lots on hand)
Pinch of salt
Handful of fresh parsley
Can of chickpeas
1 tbs of tahini sauce
Put the beans in a small pan then fill empty can with water from the tap and heat under a medium flame for 10 minutes, just above simmering.
Whilst that's happening remove the skin from the garlic and put in a pestle and mortar, add the salt and grind away so you are left with a paste (no lumps of garlic). Squeeze the juice from the lemon and add to the salt. Add in half the olive oil as well.
Chop the tomatoes in a diced fashion and finley chop the parsley and leave to one side.
Take you beans off the heat and remove the water. You will no when the beans are ready as they are very soft. Put them in a bowl, add the cumin and the garlic mixture, stirring it all together. Add the tahini and chickpeas in as well if your going for it.
Place your tomatoes in a nice pile in the centre of your bowl, parsley on top of the tomoatos and then poor more olive oil around the bowl, really go for it!
Serve with warm pita bread. That's it, just beans and some simple vegetables.
